Thinking back on the wonderful pre-summer weather we had last weekend, I’m envious of the winner of this prize pack.

Smokehouse
Sealord is the biggest name in seafood here in New Zealand and recently won the Supreme Award at the New Zealand Food Awards for their Manuka Hot Smoked Salmon.
Using piles of Manuka wood from a Waikato farm and their 30-year-old traditional wooden smokehouse (rather than electric fans and heaters) their hot smoked salmon has a deep smokey flavour and isn’t too salty like some smoked salmons can be. Sealord have three flavours in their Manuka Hot Smoked Salmon range: Natural, Peri Peri (bird’s eye chili) and Tuscan. My favourite is the Tuscan.

South Island Alpine King Salmon
Sealord Sealord Hot Smoked Salmon uses South Island Alpine King Salmon.
I wrote about Alpine Salmon last year when The Koala and I feasted on some fresh Alpine Salmon near Mt Cook. The thing about Alpine Salmon is the fish are constantly swimming against fast flowing glacial water. This results in flesh that is is firm, much leaner than ocean reared salmon and has higher levels of Omega-3. The conditions mean the salmon can be raised without antibiotics, vaccines, hormones or other chemicals.
Sealord and New Zealanders
An interesting tidbit I found in my research: In 1992, as part of the Treaty of Waitangi (Fisheries Claims) Settlement Act 1992, The Crown granted the Waitangi Fisheries Commission $150 million.
Part of this money allowed the Trust for the Māori people of New Zealand to buy 50% shares in Sealord, granting them control of the largest fishing company in New Zealand. The other major shareholder of Sealord is Japanese company Nippon Suisan. Sealord is considered a partnership between NZ Māori and Nippon Suisan.
