Win a copy of Goodbye Gluten - Tauranga author Sally Holland’s garage is bursting with the fruits of her labour, after the shipment of her ‘Goodbye Gluten’ cookbook landed this week. Sally, who wrote the book after her husband Bill was diagnosed with coeliac disease, is now busy filling orders as the Christmas rush sets in. “There has been a lot of interest in the book and I suspect some of the orders will end up in Christmas stockings,” says Sally. A self-confessed ‘foodie’, Sally wanted to produce recipes that were every bit as tasty as their gluten-free counterparts. “When someone in the house is following a gluten-free diet, everyone is affected. It is much easier if you can cook food everyone enjoys,” she says. While there are gourmet options in ‘Goodbye Gluten’, it also includes plenty of traditional favourites that are notoriously difficult to perfect without wheat flour, such as sponge cake, shortbread, and pastry. There are dedicated chapters on Christmas and children’s birthday parties – occasions that can be challenging when there is a coeliac at the table. “The secret of its success lies in the flour mix I devised for the recipes,” explains Sally, who tested all 90 recipes multiple times. “Commercial gluten-free flours can vary a lot, so I made my own flour mix and based my recipes around it. It’s made from four, inexpensive, easy-to-source ingredients and works every time when you use it in the recipes in ‘Goodbye Gluten’.” When Bill started following a gluten-free diet eight years ago, Sally was well qualified to adapt her cooking, having cut her teeth under the legendary magazine food editor Tui Flower in the New Zealand Women’s Weekly Test Kitchen in the 1970s. “I learned that the way to create a successful recipe was to test and retest it until it was perfect,” says Sally. “Following a gluten-free diet can be restrictive, with people often feeling that they have to forego some of their favourite foods.
