That’s why we’re excited to share this simple recipe for Super Green Soup. It’s the perfect way to load up on healthy greens that will keep you fighting fit during the colder months. Oh and it’s delicious too! My favourite kitchen gadget, the Electrolux Stick Mixer, makes short work of this tasty soup and if you don’t already own one then don’t despair. Super Green Soup Serves 2 1 tbsp olive oil 1 large onion, chopped 4 cloves of garlic, crushed 1 tbs sweet chilli sauce 2 heads of broccoli, chopped 2 leeks, chopped 2 cups brussels sprouts, trimmed and halved 3 cups spinach and kale 4-6 cups chicken stock 1/2 roast chicken salt and pepper to taste In a large pot, heat the olive oil over medium heat. Saut? the onion for a few minutes, then add the garlic and saut? for another minute. Add the broccoli, leeks and brussels sprouts, and stir to coat in olive oil. Cook for 4-5 minutes, stirring occasionally. Add the stock/broth, bring to a simmer, cover, and let cook for 15-20 minutes, until the veggies are nice and soft. Stir in the spinach. Remove from heat once the spinach has wilted. Leave to cool for a few minutes before pureeing with a stick mixer. Adjust the thickness by adding more broth/milk/water, and season to taste with salt and pepper. Add roughly chopped chicken to serve.
